Experimenting with Beetroot

This was probably the first time I've tasted beetroot. And you know what? It tastes somewhat similar to corn on a cob, but stronger.

I made spicy beetroot soup.

Ingredients
1 big onion, coarsely sliced
1 tin of sliced carrots (lazy me)
1 tomato, coarsely sliced
2 medium potatoes, diced
2 medium beetroots (pre-cooked), diced
Salt
Pepper
Chilli, to taste
Vegetable Oil
1 litre of water
Bisto Onion gravy pellets

Steps
  1. Pour out some vegetable oil, enough to coat the base of pan. Heat on medium setting.
  2. When oil is hot enough, toss in the onion slices. Wait until fragrant.
  3. Add the potatoes and other ingredients.
  4. Add water. Add salt and pepper. Add the Bisto Onion gravy pellets.
  5. Add chilli to taste.
  6. Bring to a boil, then simmer for half an hour.
Impressions
Sweet, earthy and quite savoury. Leftovers can be re-used in a pasta dish, perhaps.
